🌱 Beyond plant-based alternatives: a comprehensive approach
As more people become aware of their lifestyle choices and their impact on health and the environment, the demand for plant-based alternatives to traditional dairy products is growing.
RISE Research Institutes of Sweden coordinates a newly started EU project, Delicious, which during the next four years will focus on advancing plant-based dairy research through:
✅ Comprehensive product evaluations (safety, nutrition, consumer preferences, marketing strategies) and chefs’ guidance
✅ Techno-economic & sustainability analysis
✅ Development of an innovative bioinformatics tool for predicting product characteristics already at product-design level
✅ Development of cost-efficient food production processes with the inclusion of microbial products
“We are delighted to start this journey in Barcelona on the 12th of December together with a group of highly skilled organisations and researchers across Europe,” says Charis Xiros, senior researcher at RISE and coordinator of the project. “Based on significant experience and deep knowledge of the consortium, we hope we will be able to advance the technologies involved in making dairy analogues and offer society more attractive products. We are aware of the many challenges we will have to tackle throughout this journey but we are looking forward to doing this! This is our job after all: Demanding and exciting!”
